Ingredients
- 200g Scottish smoked salmon
- 1 tsp truffle oil
- 6 organic eggs
- 2 tbsp water
- 4 slices fresh bread, toasted and buttered
- 1 tbsp butter
- Handful of rocket
- Maldon Sea Salt & freshly ground pepper

Method
1. Whisk the eggs together with water and seasoning until foamy
2. Heat the butter and truffle oil in a frying pan, add the egg mixture
3. Stir continuously to scramble the eggs
4. Once cooked to desired consistency, spoon eggs onto all four toasts. Top with smoked salmon and garnish with rocket
